Same-day changeovers are normal. The workable answer is rotating inventory: enough sets on the property to make up every bed immediately, used sets collected at the changeover and returned pressed before the next arrival. Counts are agreed in writing and checked at each visit, which is how a missing set gets noticed in July. Restaurants are a large and separate part of our Setúbal work. The city eats out, particularly around the fish restaurants and the avenue, and tablecloths and napkins come back daily with oil, wine and fish marks. Cloths are treated individually, washed as their own load, and pressed.
