We also ask who eats what, and when: in a household on rotating shifts, the person starting at six in the morning does not want the same dinner as the one who gets in at midnight, and the right portion size stops food being left to spoil in the fridge. The cooking session is done over a morning or an afternoon, depending on when the house is free. We work with dishes that hold up well to cold and reheating, and with bases that serve more than one meal: a sofrito that carries two different dishes, a braised meat that goes with rice one evening and with mash another. We portion into individual boxes, write the dish and the date on each one, and order the fridge and the freezer by the order they should be eaten, with what comes first at the front. We leave a sheet explaining how to reheat, so that whoever gets home alone has no doubts. Over the weeks we adjust the menu to what the family actually ate and what was left. The rules of the service are straightforward. We cook in your kitchen, with your equipment; we do not bring prepared meals and we do not work from a central kitchen, because that is not what we do. We neither supply nor serve alcoholic drinks, as we hold no drinks licence. And where there is a serious allergy in the house, we say frankly that the risk of cross-contamination is always present in a domestic kitchen in everyday use, even buying the products specified and washing utensils for the purpose.
