Cooking for fifteen people at home looks like a matter of multiplying, but it is not. A domestic oven roasts one tray well, two with difficulty and never three at once; family pans rarely go beyond a certain capacity; and a four-burner hob forces you to choose what holds the heat at any given moment. So when the table is large we design the menu the other way round: we start from the equipment available and only then choose the dishes. We favour things that scale without losing quality — roasts that go into the oven in batches, baked rice, stews in a big pot, feijoada — and leave the delicate preparations, which need attention plate by plate, for smaller tables. Planning ahead takes care of the rest. Part of the work is done the day before or in the hours beforehand: vegetables prepared, meat seasoned, puddings made and put away. On the day the order is strict — whatever takes longest goes in first, and the kitchen is freed up as each dish comes out. We count the china too: at a party for fifteen it is common to find there are not enough plates or cutlery from the same set, and it is far better to know that beforehand than at the moment of serving. In the neighbourhoods of Serra das Minas, Tapada das Mercês and Rinchoa, where many blocks have no lift, we plan the shopping so everything goes up in one trip. What we do not do matters as well. We are not a catering company with a production unit: we cook in the house, with the pots and the oven that are there, and for that reason the number of guests has a practical limit that we state honestly case by case. We neither supply nor serve alcoholic drinks, as we hold no licence. And faced with a serious allergy we warn that in a domestic kitchen the absence of cross-contamination cannot be guaranteed.
