About our service in Estoril

The international community settled in Monte Estoril, São João and São Pedro do Estoril has brought very varied eating habits with it, and hosts here already expect that. The way to resolve it is well known but needs method: we build the menu from a base common to everyone and decide, course by course, where the variations come in. The same roast can serve the whole table if the sauce carries no flour; a pudding can be made without dairy and nobody will notice. We only truly separate what genuinely cannot be shared, and in those cases we prepare the variant first, with utensils washed beforehand, to reduce the chance of mixing. The houses help less than you might think. Many of the older villas in the area still have a pantry and a service kitchen, with a cooker that is small for the size of the house and handsome but narrow marble worktops. Before the day we ask how many burners and what oven there are, how much china there is from the same set, and whether the fridge is big enough to hold the preparations apart — because with different regimes in play, you need room to keep them away from one another. We then write out the final menu with a clear note of which dish is for whom, and carry that sheet with us on the day so nothing goes wrong at the moment of serving. It is only fair to say what we cannot assure. We do not work from a certified kitchen of our own: we cook in the client's home, in a space in everyday use. So where there is a serious allergy — nuts, shellfish, gluten in coeliac disease — we state plainly that the risk of cross-contamination exists and cannot be eliminated in a domestic kitchen; the host decides with that information. We neither supply nor serve alcoholic drinks, as we hold no licence. And no menu is ever decided by us without having been talked through with you.
