The houses of Birre, Quinta da Marinha, Manique and the Guincho side tend to have kitchens built for entertaining: a long worktop, quite often two ovens, a large fridge and an island where the whole preparation can be laid out without getting in anyone's way. With that space, a dinner for ten or twelve is comfortable, and lunch moves naturally outdoors. We always confirm three points beforehand, because they are the ones that usually fail: whether there are enough sockets and enough light in the outdoor service area, whether there is enough china for the menu planned, and how you get into the estate — many are gated, with visitors registered in advance and a time limit for deliveries. A good share of our clients in Cascais are foreign or are hosting people who are, and the request repeats itself: Portuguese cooking, done well, explained. We enjoy that work. We choose fish and shellfish from this coast, meat and vegetables in season, and introduce each dish by saying what it is, where it comes from and how it is traditionally eaten — without turning dinner into a lecture. Where the house is only used part of the year, we also leave meals prepared for the first days of the stay and put the larder in order. The menu is always discussed in advance, with time to spare: we would rather swap a dish in conversation than serve something that was not expected. On what we do not do, let us be clear. We are not caterers with a production kitchen and we do not carry finished platters in: we cook in the villa, with the equipment that is there, and the result depends on it too. We neither supply nor serve alcoholic drinks, because we hold no drinks licence; the host handles the wine and we handle the food. Where a guest has a serious allergy, we say beforehand that in a domestic kitchen we do not control everything that has passed through it, and the risk of cross-contamination cannot be entirely removed.
