Whenever the timing allows, we choose the fish and the vegetables on the day of the service, and the menu closes with a margin — we tell clients that if something better is on the stall, we will suggest the swap before buying. We never change the menu without speaking to you. Two requests dominate here: the dinner for friends, served once the children are in bed, with everything brought forward so nobody is rushing; and the week's cooking, done in a single morning, divided into family and child portions, boxes dated and a share put into the freezer for the difficult days. Families with small children often ask for simpler versions of the adults' dish, made at the same time. So there is no misunderstanding: we cook in your kitchen, not in one of ours, and we are not caterers with a production unit — what comes out is what can be done there, freshly made. We neither supply nor serve alcoholic drinks, because that needs a licence we do not hold. And if anyone in the house has a serious allergy, we warn that the risk of cross-contamination is always present in a kitchen used day to day by other people, even with utensils washed for the purpose.
