Cooking in someone else's home starts with understanding the kitchen that is already there. In Lisbon that changes from street to street: a second floor in Graça may have a two-burner hob, a short worktop and an ageing oven, while a recent flat in Avenidas Novas has induction, a fan oven and an island wide enough to hold the whole preparation. Before settling the menu we ask what there is — how many burners, what sort of oven, whether there is an extractor, how much cold storage is left in the fridge — and that answer decides the dishes. A menu that needs three things frying at once will not work in a Baixa kitchen, and it is better said beforehand than halfway through service. After that, the job is simple to describe. We agree the menu over WhatsApp, decide who does the shopping — we go to the market the same day whenever the timing allows, or you leave the ingredients ready — and we arrive early enough to prepare without rushing. At a dinner we plate and serve at the table, following the conversation rather than the clock. In a weekly session we cook several meals in one go, divide them into portions, label every box and put away what stays in the fridge and what goes into the freezer. Either way, the kitchen is clean when we leave: washing-up, worktops, hob and floor. There are things we do not do, and they are better said at the start. We are not a catering firm with a production kitchen: everything is cooked in your kitchen, which gives food that has just been made but also imposes the limits of that space and that equipment. We neither supply nor serve alcohol, because we hold no licence for it — the wine is chosen and bought by whoever is hosting. And when there is a serious allergy at the table we say it plainly: in a domestic kitchen, which we do not fully control, we cannot rule out cross-contamination. We use the products you tell us to use and utensils washed for the purpose, but the risk is real and the decision has to be made with that in mind.
