The planned quarter of the forties and fifties has kept a long-settled population, and it is common for the person contacting us to be a son or daughter living elsewhere in the city who wants a parent to eat decently during the week. The work begins with a conversation about what the person likes to eat, what they no longer eat, and whether there are medical instructions to respect — less salt, less fat, softer textures, set mealtimes. Then we go to the kitchen of the house, which in these buildings tends to be roomy and well organised, even with an old cooker. A morning's work is enough to leave soups, meat and fish dishes, and side dishes that hold up well in the freezer. The care is in what comes after. Every box carries the name of the dish and the date it was made, written large and legibly. We separate what stays in the fridge for the immediate days from what goes in frozen, and we order the freezer so that no packet is discovered forgotten at the back. On a simple sheet we leave the time and method for reheating each dish. Where it makes sense we favour smaller portions: better to defrost twice than to throw food away. We repeat the session as often as the family wants, adjusting the menu according to what the person actually ate and what was left behind. There are limits we always state at the outset. We are not a prepared-meals service cooking in a central kitchen: we cook in the client's home, with that home's utensils. We have no clinical training, so we follow the doctor's or the dietitian's instructions exactly as they are given to us, without interpreting them. We do not supply alcoholic drinks, as we hold no licence for it. And in the case of a serious allergy we warn that a domestic kitchen does not allow us to guarantee the absence of traces of other foods.
