The residential towers of Oriente, Cabo Ruivo and Alameda dos Oceanos have recent, well-equipped kitchens, but nearly all of them open onto the living area. That shapes what makes sense to cook. A long session on the grill under the extractor of an open kitchen leaves a smell in the room for hours, and a cluttered worktop sits in plain view of people sitting three metres away. So we work in stages, let the oven take the heavier part of the load, and wash up continuously, so the worktop looks right at any moment of the evening. Before the agreed day we also confirm access: many buildings want the concierge told in advance, entry through the car park and the service lift used for anything heavy. Two situations repeat here. The first is the working dinner at home, for a small number of guests, where the timing counts as much as the food: we arrive early, the starter is ready at the agreed hour, and each course is served without anyone having to get up from the table. The second is a week of meals for people who travel often and get home late — we cook everything in one session, divide it into individual portions, write on each box what it holds and the date, and leave plain instructions for reheating without spoiling the dish. In both cases the menu is settled in advance, with time to swap anything that does not appeal. Two honest notes on the limits. We do not work from an industrial kitchen and we do not carry finished dishes across town: we cook in the flat, with the equipment that is there, and that is what allows everything to be served freshly made. And we do not handle drinks. We neither supply nor serve alcohol, because we hold no licence for it, so the wine for the evening stays with the host. Where a guest has a serious allergy, we say clearly that a shared domestic kitchen offers no full guarantee against cross-contamination.
