About our service in Belém

The villas and mansion blocks of Restelo, Junqueira and Alto da Ajuda were built when the kitchen was a working room, shut off by a door or a pantry from the room where guests are received. In practice that means two things. The first is welcome: we can cook with the freedom of people who are not being watched, pans on the heat and the worktop full, without any of it reaching the table. The second is less convenient: the equipment has not always kept pace with the house. Old cookers with a small oven and unreliable temperature, low worktops and fridges with little room force us to plan the order of the courses carefully. When we find the oven is short on space, we adapt: fewer roasts at the same time, more work in the pot, and more prepared in advance. The most frequent request in Belém is the Sunday family lunch, several generations at the table and dishes that people have been waiting for — a soup to open, a dish that goes whole to the centre of the table, a pudding made in the house. We serve at the table when that is what you want, or leave everything ready on platters so the family helps itself, which is how some houses prefer it. We also leave meals prepared for the days that follow, because after a large lunch there is always someone who does not want to cook again that week. We use the house's china and serving dishes unless you ask otherwise, and everything goes back washed and in its place. That said, it is worth knowing what the service is not. We have no production kitchen and we do not bring cooked food in from outside: the cooking happens in Belém, in your home. We neither supply nor serve alcohol, as we hold no licence for it. And if there is a serious allergy among the guests, we explain beforehand that in a private kitchen we cannot guarantee the absence of traces of other foods, however carefully the utensils are handled.
