Our way of solving it is to chain the work: prepare and clear, chop and clean, never having more on the worktop than the stage in hand. That is what makes it possible, in a small space, to produce a dinner of starter, main and pudding for four or six without the kitchen seizing up halfway. We confirm beforehand the number of burners, the state of the oven and the free space in the fridge, because that is where most plans come apart. The logistics of the street count too. Between Algés centre, Miraflores and Dafundo, parking at the door is rarely possible, and carrying shopping from far away eats into the time. So we buy to the exact measure of the menu, often in the local street shops, and avoid quantities that would then have nowhere to be stored. The two most requested services here are the dinner for a few guests, served at the table in the living room, and the week's meals for couples who work in Lisbon and take the train in the morning and again at the end of the day: we cook in one go, divide into portions, label with the dish and the date, and leave part of it frozen. As everywhere, there are limits we do not hide.
