A weekly session done properly is not about cooking a great deal at once: it is about planning. Before we come to the house, we agree how many meals you want left ready, for how many people, and what nobody there will eat. We then build a plan around dishes that behave well in storage — stews, pulses, baked rice, roast meats that slice well cold, vegetables that do not go limp on the second day — and separate out the parts that must be done at the last minute, such as pasta or salads. That detail is the difference between a week of good food and five identical boxes that nobody wants to open by Thursday. On the day, the work runs in blocks. We use the oven and the burners at the same time, start with whatever takes longest, and cool and pack each dish as it comes out. Portion sizes are chosen with you: individual for households eating at different hours, family-sized where everyone sits down together. Everything is labelled with the dish and the date, part going into the fridge for the first days and part into the freezer. In Benfica, between Grão Pará, Estrada de Benfica and São Domingos, the housing mixes older blocks with recent developments, and the freezer space varies enormously from home to home; we count that space before deciding how many dishes make sense. We vary the menu from week to week, keeping a record of what has already been made. Some things are outside the service, and it is only fair to say so. We do not deliver meals cooked somewhere else: we cook in your home, and that is what lets us adjust the seasoning and the cooking to the taste of whoever will be eating. We neither supply nor serve alcoholic drinks, as we do not hold the required licence. And if there is a serious allergy in the house, we explain that in a domestic kitchen, with utensils and surfaces in daily use, we cannot guarantee the absence of cross-contamination, however careful we are.
