The plan is the part that is usually missing. Before the cooking day, we send a proposed set of menus for the period agreed and you reply with what you want changed — a dish that has come round too often, an ingredient nobody in the house eats, an evening when you will be out. Only then do we buy. That exchange takes a few minutes and heads off the commonest failure of this service, which is a house full of food nobody fancies. We keep a record of what has already been made, so the weeks do not repeat themselves, and we note what was left over, which is the most useful information of all. The newer developments of Odivelas centre, Ramada and Famões have modern kitchens, many open to the living room, with induction hobs and fan ovens — equipment that lets us work quickly and cleanly. In the older parts, in Pontinha or Póvoa de Santo Adrião, we find smaller, closed kitchens, and we adjust the plan accordingly: fewer dishes going at once, more work chained in sequence, so the worktop is never held up by one slow stage. Either way, the session leaves the following days' dinners ready and, on request, the lunchboxes to take to work: individual portions, in containers meant for carrying and reheating, labelled with the dish and the date. We always say which ones should be eaten first. Three limits, stated before any booking. We cook in your kitchen, with your equipment; we do not work from a central kitchen and we do not deliver meals cooked elsewhere. We neither supply nor serve alcoholic drinks, because that requires a licence we do not hold. And faced with a serious allergy in the house, we say clearly that in a domestic kitchen, in daily use by the people who live there, the risk of cross-contamination does not go away, even buying products the family has approved and washing utensils for the purpose before we start.
