In houses with a yard or a back garden, lunch happens partly outside the kitchen, and that is where it pays to be realistic. A charcoal grill, an outdoor oven or a plain side table change the possible menu completely, so we always ask what is out there, whether it is fit to use, and whether water and power are within reach. What does not change is the principle: we cook on site, with the equipment the house has, and we carry in no food already made. We agree the route the dishes take between the indoor kitchen and the table outside, and we set the order so that nothing stands too long in the sun or waiting. In summer that has practical consequences — starters go out at the last minute and desserts stay cold until the moment of serving. The north of the municipality gives access to local produce, and we use it whenever the season and the hour allow: garden vegetables, fruit in season, produce from the stalls at Bucelas and round about. It is a real advantage rather than a fixed promise: if what we were after is not there, we say so beforehand and adjust the menu with you instead of substituting on our own account. On the urban side the work is a different one. In Sacavém, in Moscavide and in Santo António dos Cavaleiros we prepare meals for several days, in labelled portions, for families who work in Lisbon or near the airport and get home late. The limits of the service are the same everywhere. We are not a caterer with a production kitchen of our own: all the cooking is done in the client's home, which means the kitchen has to be free for the period agreed. We neither supply nor serve alcoholic drinks, as we hold no licence to sell them. And where someone at the table has a serious allergy, we say plainly that a domestic kitchen does not let us guarantee the absence of cross-contamination.
